Ziplock baggies with spent cartridges, recovered bullets, hair samples, or any other type of forensic evidence they might recover during the course of an investigation.  For one op I supplied MREs for dinner so the players would understand what their characters were eating (they now spend much more money on civilian alternatives.)  Cassette tapes with answering machine messages or intercepted telephone conversations.
