For home floorplans, there are several magazine publications in the US.
Some have as few as 50 or as many as 500 floorplans for single-family homes.
There are several books published every year with hundreds of floorplans for
single-family homes. These are all used by home buyers to find there dream
home, order the blueprints and take those to a contractor to build for them.
Most of the house plan software available have some to lots of example
plans.
You can get a rough seating plan of most commercial airliners from the
Airline websites, just search around for the aircraft or seat plans, some
are better than others.
For small planes, business jets and so forth, check the manufacturers
web sites. They will have examples of the different layouts they offer,
many times with associated pictures.
For small boats, again check the manuf. website.
For ocean liners, check with your travel agent. The cruise lines put
out brochures on the various ships and routes. These have deck plans for
the public spaces. I was never able to find plans for the other areas.
I have no source for commercial tankers, freighters, or others.

I hope this helps.
